- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup raspberry jam
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream the butter and sugar until light and fluffy. Add vanilla extract.
- Mix in almond flour, all-purpose flour, and salt until a soft dough forms.
- Divide the dough into two portions, flatten into discs, wrap, and chill for at least 1 hour.
- Roll out dough on a floured surface to 1/8 inch thick. Cut half of the cookies as solid rounds and the other half with center cutouts.
- Place cookies on baking sheets and bake for 10 to 12 minutes until edges are lightly golden. Cool completely.
- Spread 1/2 teaspoon jam on the flat side of each solid cookie. Top with cutout cookies.
- Dust the finished cookies with powdered sugar and serve.
