Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 cups vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 1 large carrot, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger, cooking until soft.
  3. Stir in curry paste, cumin, and coriander and cook briefly.
  4. Add lentils, carrot, broth, salt, and pepper.
  5. Bring to a boil, then simmer for 20 minutes.
  6. Stir in coconut milk and simmer 5 minutes.
  7. Serve warm with cilantro on top.

  • Adjust spice level to taste.
