- 1 cup red lentils
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 4 cups vegetable broth
- 1 can (13.5 oz) coconut milk
- 1 large carrot, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger, cooking until soft.
- Stir in curry paste, cumin, and coriander and cook briefly.
- Add lentils, carrot, broth, salt, and pepper.
- Bring to a boil, then simmer for 20 minutes.
- Stir in coconut milk and simmer 5 minutes.
- Serve warm with cilantro on top.

- Adjust spice level to taste.
- Add broth if soup thickens too much.
