Description

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Cream together butter and sugar until fluffy.
  3. Mix in eggs, coconut milk, vanilla, flour, baking powder, salt, and shredded coconut.
  4. Separate one third of the batter and stir in the cocoa powder.
  5. Spoon alternating dollops of vanilla coconut batter and chocolate batter into the pan.
  6. Swirl gently with a skewer, then bake for 45 to 55 minutes until a toothpick comes out clean.
  7. Cool for 10 minutes before slicing and serving.
