Ingredients

  • 4 salmon fillets (about 5 oz each)
  • 1 can (13.5 oz) coconut milk
  • 1.5 cups corn kernels (fresh or frozen)
  • 2 garlic cloves, minced
  • 1 small shallot, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Warm a large skillet over medium heat and prepare all ingredients.
  2. Heat olive oil, then sauté garlic and shallot until soft and fragrant, about 2 minutes.
  3. Pour in coconut milk and vegetable broth. Add corn and a pinch of salt. Bring to a gentle simmer.
  4. Nestle the salmon fillets into the simmering broth. Spoon liquid over the top.
  5. Cover and cook for about 10 minutes or until salmon flakes easily with a fork.
  6. Turn off the heat. Stir in dill and lemon juice. Let rest a few minutes.
  7. Spoon into bowls. Garnish with more dill if desired. Serve with rice, couscous, or bread.
