Description

A bright, creamy Country Club Salad with tender diced chicken, juicy grapes, crisp apple, crunchy toasted nuts, and a honey-lemon yogurt-mayo dressing. Perfect for luncheons, picnics, or a light weeknight meal.


Ingredients

  • 2 cups cooked chicken breast, diced (about 1012 oz cooked)
  • 1 cup seedless grapes, halved
  • 1 medium apple, diced (Honeycrisp or Fuji recommended)
  • 1/2 cup celery, chopped
  • 1/2 cup pecans or walnuts, toasted and chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Toast the nuts (optional): Preheat oven to 350°F. Spread nuts on a baking sheet and toast 5–7 minutes until fragrant. Let cool, then chop.
  2. Prep the produce and chicken: Halve the grapes, dice the apple and chicken, and chop the celery. Toss apple pieces with a little lemon if not dressing immediately to prevent browning.
  3. Make the dressing: In a bowl whisk together mayonnaise, Greek yogurt, honey, lemon juice, salt, and pepper until smooth and well combined.
  4. Combine salad ingredients: In a large mixing bowl add the diced chicken, grapes, apple, celery, and toasted nuts.
  5. Dress and toss: Pour the dressing over the salad and toss gently until everything is evenly coated. Taste and adjust seasoning with salt, pepper, or a squeeze more lemon or a drizzle more honey if desired.
  6. Chill and meld: Cover and chill the salad for at least 30 minutes to let flavors meld. Stir gently before serving.
  7. Serve: Serve over a bed of crisp lettuce, in croissants, or as a filling for wraps. Garnish with additional toasted nuts if desired.
