- 1 cup black beans, drained and rinsed
- 1 cup sweet corn kernels
- 1 cup cherry tomatoes, halved
- 1 large avocado, diced
- 1 cup shredded cheddar cheese
- 1 small red onion, thinly sliced
- 2 tablespoons fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook the chicken thighs until fully done, then let them rest and slice.
- In a small bowl, whisk together Greek yogurt, lime juice, olive oil, salt, and black pepper until smooth.
- In a large mixing bowl, add sliced chicken, black beans, corn, cherry tomatoes, red onion, cheddar cheese, and cilantro.
- Add the diced avocado to the bowl.
- Pour the dressing over the salad and toss gently until evenly coated.
- Taste and adjust seasoning if needed, then serve fresh.
