  • 1 cup black beans, drained and rinsed
  • 1 cup sweet corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, diced
  • 1 cup shredded cheddar cheese
  • 1 small red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the chicken thighs until fully done, then let them rest and slice.
  2. In a small bowl, whisk together Greek yogurt, lime juice, olive oil, salt, and black pepper until smooth.
  3. In a large mixing bowl, add sliced chicken, black beans, corn, cherry tomatoes, red onion, cheddar cheese, and cilantro.
  4. Add the diced avocado to the bowl.
  5. Pour the dressing over the salad and toss gently until evenly coated.
