Instructions
- In a large pot, heat a splash of oil over medium heat. Add diced chicken and cook until lightly browned and cooked through, about 5–7 minutes. Remove and set aside.
- In the same pot, add onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant and softened.
- Pour in chicken broth and soy sauce. Bring to a gentle boil.
- Add sliced carrots and cook for 5 minutes until slightly tender.
- Add vermicelli noodles and simmer according to package instructions (usually 3–5 minutes).
- Return cooked chicken to the pot along with chopped spinach. Cook for another 2 minutes until spinach is wilted and soup is heated through.
- Season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh cilantro and lime wedges. Serve hot.
