Instructions
- Preheat your oven to 350°F (175°C). Lightly grease and flour a 9-inch round cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla and sour cream.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Toss cranberries with a little flour, then gently fold them into the batter.
- Pour batter into the prepared cake pan and smooth the top. Optionally, sprinkle sugar over the top for a crisp crust.
- Bake for 40 to 45 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
