  • 8 ounces cream cheese, softened
  • 14 ounces sweetened condensed milk
  • 12 ounces evaporated milk
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350°F and bring water to a boil for the water bath.
  2. In a blender, combine cream cheese, sweetened condensed milk, evaporated milk, eggs, vanilla extract, and 1/2 cup of the sugar. Blend until completely smooth.
  3. In a saucepan over medium heat, melt the remaining 1/2 cup sugar until it turns a deep golden amber. Carefully pour the caramel into a round cake pan and swirl to coat the bottom evenly.
  4. Strain the custard mixture into the caramel-coated pan.
  5. Place the pan inside a larger baking dish. Pour hot water into the outer dish until it reaches halfway up the sides of the flan pan.
  6. Bake for 50 to 60 minutes, or until the center is set but slightly jiggly.
  7. Remove from the water bath and allow to cool completely. Refrigerate for at least 4 hours or overnight.
  8. Run a knife around the edges, invert onto a serving plate, and serve chilled.
