  • 12 oz spaghetti or linguine
  • 2 ripe avocados
  • 2 cloves garlic
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves (packed)
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Reserve 1/4 cup pasta water, then drain.
  2. In a blender or food processor, combine avocados, garlic, lemon juice, olive oil, basil, salt, and pepper. Blend until completely smooth.
  3. Return drained pasta to the pot and pour the avocado sauce over it. Add reserved pasta water a little at a time, tossing gently to coat until sauce reaches desired consistency.
  4. Sprinkle with grated parmesan and freshly cracked black pepper. Garnish with extra basil if desired.
  5. Serve immediately while warm and creamy.
