- 12 oz spaghetti or linguine
- 2 ripe avocados
- 2 cloves garlic
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1/4 cup fresh basil leaves (packed)
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Reserve 1/4 cup pasta water, then drain.
- In a blender or food processor, combine avocados, garlic, lemon juice, olive oil, basil, salt, and pepper. Blend until completely smooth.
- Return drained pasta to the pot and pour the avocado sauce over it. Add reserved pasta water a little at a time, tossing gently to coat until sauce reaches desired consistency.
- Sprinkle with grated parmesan and freshly cracked black pepper. Garnish with extra basil if desired.
- Serve immediately while warm and creamy.
