- 1 pound ground beef
- 1 1/2 cups uncooked white rice
- 8 ounces mushrooms, sliced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (10.5 ounces) cream of mushroom soup
- 2 1/2 cups beef broth
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons parsley, chopped
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a casserole dish.
- In a skillet, heat olive oil and sauté onion, garlic, and mushrooms until golden. Add beef, season with salt and pepper, and cook until browned.
- In a mixing bowl, stir together uncooked rice, cream of mushroom soup, beef broth, sour cream, and half of the cheese.
- Spread the rice mixture into the casserole dish, then top with the beef and mushroom mixture. Stir lightly to combine.
- Cover with foil and bake for 45 minutes until rice is tender. Remove foil, sprinkle with remaining cheese, and bake uncovered for 10 minutes.
- Let rest 5–10 minutes before serving. Garnish with parsley and enjoy.
