Description

Light and airy choux pastry filled with silky mascarpone cream and topped with a glossy dark chocolate ganache. These elegant éclairs are crisp on the outside, creamy on the inside, and perfect for any special occasion or indulgent dessert moment.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all purpose flour
  • 4 large eggs
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 150 grams dark chocolate
  • 1/2 cup heavy cream for glaze

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, bring water, butter, and salt to a boil. Remove from heat, add flour all at once, and stir vigorously. Return to heat and cook until dough pulls away from the sides.
  3. Let dough cool slightly, then beat in eggs one at a time until smooth and glossy.
  4. Transfer dough to a piping bag and pipe even strips onto the prepared baking sheet.
  5. Bake for 20 to 25 minutes until golden and puffed. Cool completely.
  6. Whip 1 cup heavy cream with powdered sugar and vanilla extract until soft peaks form. Fold into mascarpone cheese until smooth.
  7. Fill cooled shells by piping mascarpone cream inside.
  8. Heat 1/2 cup heavy cream for glaze and pour over chopped dark chocolate. Stir until smooth to form ganache.
  9. Dip tops of filled éclairs into ganache and allow to set before serving.

Notes

  • Do not open the oven door too early while baking to prevent collapsing.
  • Ensure shells are completely cool before filling.
  • Chill filled éclairs for 20 to 30 minutes for best texture.
  • Unfilled shells can be frozen and reheated briefly before filling.
