Ingredients

  • 2 large sweet potatoes
  • 150 g chorizo, sliced
  • 2 medium leeks, sliced
  • 1 tablespoon olive oil
  • ½ cup cooking cream
  • 2 cloves garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 200°C.
  2. Rub the sweet potatoes with olive oil and place them on a baking tray.
  3. Roast for about 35 minutes until tender and lightly caramelized.
  4. In a skillet cook sliced chorizo over medium heat until lightly crisp, then remove and set aside.
  5. In the same skillet add sliced leeks and minced garlic and cook until softened.
  6. Pour in the cream and add paprika, salt, and black pepper, then simmer gently until the sauce thickens.
  7. Return the chorizo to the skillet and stir into the creamy leek sauce.
  8. Slice open the roasted sweet potatoes.
  9. Spoon the creamy leek and chorizo mixture generously over the sweet potatoes.
  10. Serve warm and enjoy.
