- 150 g chorizo, sliced
- 2 medium leeks, sliced

- ½ cup cooking cream
- 2 cloves garlic, minced

- ¼ teaspoon black pepper
Instructions
- Preheat the oven to 200°C.
- Rub the sweet potatoes with olive oil and place them on a baking tray.
- Roast for about 35 minutes until tender and lightly caramelized.
- In a skillet cook sliced chorizo over medium heat until lightly crisp, then remove and set aside.
- In the same skillet add sliced leeks and minced garlic and cook until softened.
- Pour in the cream and add paprika, salt, and black pepper, then simmer gently until the sauce thickens.
- Return the chorizo to the skillet and stir into the creamy leek sauce.
- Slice open the roasted sweet potatoes.
- Spoon the creamy leek and chorizo mixture generously over the sweet potatoes.
- Serve warm and enjoy.
