- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup pepperoncini peppers, sliced or whole
- 2 tablespoons pepperoncini brine
- 1/2 cup Parmesan cheese, freshly grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat a skillet or Dutch oven over medium-high heat and add olive oil.
- Season chicken with salt and pepper, then sear on both sides until golden brown. Remove and set aside.
- In the same skillet, sauté garlic until fragrant. Pour in chicken broth and pepperoncini brine, scraping up any browned bits.
- Stir in heavy cream and Parmesan cheese until the sauce becomes smooth and slightly thickened.
- Return chicken to the skillet, nestle pepperoncini peppers around it, cover, and simmer for 15–20 minutes.
- Garnish with fresh parsley and adjust seasoning if needed.
- Serve hot over rice, pasta, or mashed potatoes with plenty of sauce.
