  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup pepperoncini peppers, sliced or whole
  • 2 tablespoons pepperoncini brine
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat a skillet or Dutch oven over medium-high heat and add olive oil.
  2. Season chicken with salt and pepper, then sear on both sides until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant. Pour in chicken broth and pepperoncini brine, scraping up any browned bits.
  4. Stir in heavy cream and Parmesan cheese until the sauce becomes smooth and slightly thickened.
  5. Return chicken to the skillet, nestle pepperoncini peppers around it, cover, and simmer for 15–20 minutes.
  6. Garnish with fresh parsley and adjust seasoning if needed.
  7. Serve hot over rice, pasta, or mashed potatoes with plenty of sauce.
