A rich and comforting pasta dish inspired by the beloved Xander’s Babar Pasta, featuring tender chicken, a creamy Tuscan-style sauce, sun dried tomatoes, and fresh spinach.

- 2 large chicken breasts, sliced thin
- 12 ounces penne or fettuccine pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup sun dried tomatoes, chopped
- 1 and a half cups heavy cream
- 1 cup chicken broth
- 1 cup grated parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- 1 teaspoon salt, or to taste
- Half teaspoon black pepper
- Quarter cup reserved pasta water
Instructions
- Boil a pot of salted water and cook pasta until al dente, then set aside with some reserved pasta water.
- Season sliced chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat and sear chicken until golden, then remove.
- Add garlic and sun dried tomatoes to the skillet and cook until softened.
- Pour in chicken broth and heavy cream, then simmer on medium heat until the sauce thickens.
- Stir in parmesan cheese until melted, then return the chicken to the skillet.
- Add cooked pasta and a splash of pasta water, tossing until coated.
- Fold in spinach until just wilted, then serve warm.
Notes
- Use freshly grated parmesan for a smoother sauce.
- Add chili flakes if you enjoy a little heat.
- Reheat leftovers gently with a splash of broth or cream.
