Description

A rich and comforting pasta dish inspired by the beloved Xander’s Babar Pasta, featuring tender chicken, a creamy Tuscan-style sauce, sun dried tomatoes, and fresh spinach.


Ingredients

  • 2 large chicken breasts, sliced thin
  • 12 ounces penne or fettuccine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup sun dried tomatoes, chopped
  • 1 and a half cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt, or to taste
  • Half teaspoon black pepper
  • Quarter cup reserved pasta water

Instructions

  1. Boil a pot of salted water and cook pasta until al dente, then set aside with some reserved pasta water.
  2. Season sliced chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet over medium heat and sear chicken until golden, then remove.
  4. Add garlic and sun dried tomatoes to the skillet and cook until softened.
  5. Pour in chicken broth and heavy cream, then simmer on medium heat until the sauce thickens.
  6. Stir in parmesan cheese until melted, then return the chicken to the skillet.
  7. Add cooked pasta and a splash of pasta water, tossing until coated.
  8. Fold in spinach until just wilted, then serve warm.

Notes

  • Use freshly grated parmesan for a smoother sauce.
  • Add chili flakes if you enjoy a little heat.
  • Reheat leftovers gently with a splash of broth or cream.
