Description

A rich and indulgent twist on classic French toast, this Crème Brûlée French Toast features soft brioche soaked in creamy custard, baked until golden, and topped with a caramelized sugar crust.


Ingredients

  • 1 loaf brioche bread, sliced thick (1012 slices)
  • 1 cup heavy cream
  • 1 cup whole milk
  • 5 large eggs
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar (for topping)
  • 2 tablespoons unsalted butter, melted
  • Powdered sugar and fresh berries, for garnish

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, heavy cream, milk, brown sugar, vanilla, and salt until smooth.
  3. Arrange brioche slices in the baking dish, slightly overlapping.
  4. Pour custard evenly over bread, pressing gently. Cover and refrigerate overnight (or at least 4 hours).
  5. Bake covered for 30 minutes. Remove foil and bake for another 15–20 minutes until golden and puffed.
  6. Sprinkle granulated sugar on top. Use a kitchen torch to caramelize or broil briefly until sugar bubbles and browns.
  7. Let cool for 10 minutes before slicing. Garnish with powdered sugar and berries. Serve warm.

  • Use stale brioche for best results—it soaks custard without turning mushy.
  • Broil with care to avoid burning the sugar topping.
