Description
A rich and indulgent twist on classic French toast, this Crème Brûlée French Toast features soft brioche soaked in creamy custard, baked until golden, and topped with a caramelized sugar crust.

- 1 loaf brioche bread, sliced thick (10–12 slices)
- 1 cup heavy cream
- 1 cup whole milk
- 5 large eggs
- 3/4 cup brown sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1/3 cup granulated sugar (for topping)
- 2 tablespoons unsalted butter, melted
- Powdered sugar and fresh berries, for garnish
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking dish.
- In a large bowl, whisk together eggs, heavy cream, milk, brown sugar, vanilla, and salt until smooth.
- Arrange brioche slices in the baking dish, slightly overlapping.
- Pour custard evenly over bread, pressing gently. Cover and refrigerate overnight (or at least 4 hours).
- Bake covered for 30 minutes. Remove foil and bake for another 15–20 minutes until golden and puffed.
- Sprinkle granulated sugar on top. Use a kitchen torch to caramelize or broil briefly until sugar bubbles and browns.
- Let cool for 10 minutes before slicing. Garnish with powdered sugar and berries. Serve warm.
Notes
- Use stale brioche for best results—it soaks custard without turning mushy.
- Broil with care to avoid burning the sugar topping.
- Make ahead the night before to save time in the morning.
