Description

Ingredients

  • 1 1/2 cups milk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup water

Instructions

  1. In a blender or large bowl, combine flour, milk, eggs, melted butter, salt, vanilla (if using), and water. Blend or whisk until smooth. Let the batter rest for 30 minutes.
  2. Heat a nonstick skillet over medium heat. Lightly grease with butter or cooking spray.
  3. Pour about 1/4 cup of batter into the pan. Immediately tilt and swirl the pan to coat the bottom evenly.
  4. Cook for 1 minute or until edges lift and bottom is golden. Flip and cook the second side for 30 seconds.
  5. Transfer to a plate and repeat with remaining batter, greasing the pan as needed.
  6. Serve warm with desired fillings or toppings.
