Description

A bold and comforting fusion dish that layers tender, slow-simmered beef rendang over a crisp pizza crust, finished with melted mozzarella, red onion, fresh chili, and cilantro for an unforgettable balance of spice and creaminess.

  • 500 grams beef chuck, cut into chunks
  • 400 milliliters coconut milk
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 large pizza dough, about 400 grams
  • 200 grams mozzarella cheese, shredded
  • 1 small red onion, thinly sliced
  • 1 fresh red chili, thinly sliced
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat oven to 220 degrees Celsius and place a pizza stone or baking tray inside to heat.
  2. In a large pot over medium heat, sauté chopped onion, garlic, and grated ginger until fragrant. Stir in red curry paste, ground coriander, and ground cumin.
  3. Add beef chuck pieces and cook for 3 to 4 minutes until lightly browned. Pour in coconut milk and salt, then reduce heat to low.
  4. Simmer for 60 minutes, stirring occasionally, until beef is tender and sauce thickens. Shred beef slightly. Roll out pizza dough and spread a thin layer of thickened rendang over the surface.
  5. Sprinkle shredded mozzarella evenly, then top with sliced red onion and fresh red chili.
  6. Transfer pizza to the hot stone or tray and bake for 12 to 15 minutes until crust is golden and crisp and cheese is bubbling.
  7. Remove from oven, scatter chopped cilantro on top, slice, and serve immediately.

Notes

  • Do not overload the pizza with sauce to keep the crust crisp.
  • The beef rendang can be prepared up to two days in advance and refrigerated.
  • Rotate the pizza halfway through baking for even browning.
  • Reheat leftovers in the oven at 180 degrees Celsius for best texture.
