- 500 grams beef chuck, cut into chunks
- 400 milliliters coconut milk
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 large pizza dough, about 400 grams
- 200 grams mozzarella cheese, shredded
- 1 small red onion, thinly sliced
- 1 fresh red chili, thinly sliced
- 2 tablespoons fresh cilantro, chopped
Instructions
- Preheat oven to 220 degrees Celsius and place a pizza stone or baking tray inside to heat.
- In a large pot over medium heat, sauté chopped onion, garlic, and grated ginger until fragrant. Stir in red curry paste, ground coriander, and ground cumin.
- Add beef chuck pieces and cook for 3 to 4 minutes until lightly browned. Pour in coconut milk and salt, then reduce heat to low.
- Simmer for 60 minutes, stirring occasionally, until beef is tender and sauce thickens. Shred beef slightly. Roll out pizza dough and spread a thin layer of thickened rendang over the surface.
- Sprinkle shredded mozzarella evenly, then top with sliced red onion and fresh red chili.
- Transfer pizza to the hot stone or tray and bake for 12 to 15 minutes until crust is golden and crisp and cheese is bubbling.
- Remove from oven, scatter chopped cilantro on top, slice, and serve immediately.
Notes
- Do not overload the pizza with sauce to keep the crust crisp.
- The beef rendang can be prepared up to two days in advance and refrigerated.
- Rotate the pizza halfway through baking for even browning.
- Reheat leftovers in the oven at 180 degrees Celsius for best texture.
