- 2 cups butternut squash, peeled and diced
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 sheets puff pastry, thawed
- 1 tablespoon sesame seeds
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Toss the diced butternut squash with olive oil, cumin, paprika, salt, and black pepper until well coated.
- Spread the squash evenly on the baking sheet and roast for 20 minutes until tender, then let cool slightly.
- Mix the roasted squash with the chopped onion in a bowl.
- Cut puff pastry sheets into equal squares and place a spoonful of filling in the center of each.
- Fold into triangles and seal the edges firmly.
- Arrange on the baking sheet, brush lightly with oil, and sprinkle with sesame seeds.
- Bake for 25 minutes until golden brown and crispy.
- Let rest briefly, then serve warm.
