Description

Golden, crunchy crispy fried chicken with a perfectly seasoned crust and juicy interior, marinated in buttermilk and fried to perfection.


Ingredients

  • 3 pounds mixed chicken pieces (drumsticks, thighs, wings), bone in and skin on
  • 2 cups buttermilk
  • 2 cups all purpose flour
  • 1/2 cup cornstarch
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • About 4 cups vegetable oil for frying

Instructions

  1. Marinate chicken in buttermilk for at least 2 hours in the refrigerator.
  2. Heat vegetable oil in a heavy pot to 350 degrees Fahrenheit.
  3. In a bowl, mix flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder.
  4. Remove chicken from buttermilk, dredge thoroughly in flour mixture, and let rest for 10 minutes.
  5. Fry in batches for 12 to 15 minutes, turning occasionally, until golden brown and internal temperature reaches 165 degrees Fahrenheit.
  6. Transfer to a wire rack and rest 5 minutes before serving.
