- 3 pounds mixed chicken pieces (drumsticks, thighs, wings), bone in and skin on
- 2 cups buttermilk
- 2 cups all purpose flour
- 1/2 cup cornstarch
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- About 4 cups vegetable oil for frying
Instructions
- Marinate chicken in buttermilk for at least 2 hours in the refrigerator.
- Heat vegetable oil in a heavy pot to 350 degrees Fahrenheit.
- In a bowl, mix flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder.
- Remove chicken from buttermilk, dredge thoroughly in flour mixture, and let rest for 10 minutes.
- Fry in batches for 12 to 15 minutes, turning occasionally, until golden brown and internal temperature reaches 165 degrees Fahrenheit.
- Transfer to a wire rack and rest 5 minutes before serving.
