Description
Crock Pot Broccoli Cheese Soup is a creamy, comforting classic that’s incredibly easy to make. Loaded with tender broccoli, melty Velveeta, and savory flavors, it’s the perfect cozy meal for chilly nights or lazy weekends—all with minimal prep thanks to your slow cooker.
Ingredients
Scale
- 1/2 cup chopped onion
- 2 tablespoons butter or margarine
- 1 (10-ounce) can cream of chicken soup
- 1 1/2 cups milk
- 1 pound Velveeta cheese, cubed
- 1 (10-ounce) package frozen chopped broccoli
Instructions
- In a small skillet, melt butter over medium heat. Add chopped onion and sauté until translucent, about 3–4 minutes.
- Transfer sautéed onions to your crock pot.
- Add cream of chicken soup, milk, Velveeta cheese cubes, and frozen chopped broccoli to the crock pot. Stir to combine.
- Cover and cook on low for 3–4 hours, or on high for 1.5–2 hours, stirring occasionally, until the cheese is fully melted and the soup is smooth and heated through.
- Serve hot, garnished with extra shredded cheese or croutons if desired.
Notes
- For extra richness, substitute half-and-half or heavy cream for milk.
- Use fresh steamed broccoli instead of frozen for a chunkier texture.
- Add a pinch of nutmeg or cayenne for a little flavor depth.
