Description

Tender, fluffy potatoes gently slow-cooked in foil with butter, olive oil, salt, and pepper, finished with fresh herbs for a cozy, hands-off side dish.


Ingredients

  • 6 medium russet potatoes, scrubbed and dried
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons unsalted butter, cut into 6 pats
  • 2 tablespoons fresh parsley, finely chopped
  • Heavy-duty aluminum foil sheets

Instructions

  1. Scrub potatoes clean and pat dry. Pierce each potato several times with a fork.
  2. Rub each potato with a light coat of olive oil, then sprinkle evenly with salt and pepper.
  3. Place each potato on a sheet of heavy-duty foil, add 1 pat of butter on top, and wrap tightly to seal.
  4. Arrange the foil-wrapped potatoes in a single layer in the slow cooker.
  5. Cook on Low for 7 to 8 hours or on High for 4 to 5 hours, until potatoes are fork-tender through the center.
  6. Carefully unwrap, sprinkle with chopped parsley, and serve hot with your favorite toppings.

Notes

  • Note: For slightly crisper skins, open the foil during the last 30 minutes of cooking.
  • Add a garlic clove or a thyme sprig inside each foil packet for aromatic flavor.
  • Do not overcrowd the slow cooker, leave a little space for even heat circulation.
  • Leftovers reheat well in the oven or microwave and can be repurposed into breakfast potatoes.
