- 6 medium russet potatoes, scrubbed and dried
- 2 tablespoons olive oil
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons unsalted butter, cut into 6 pats
- 2 tablespoons fresh parsley, finely chopped
- Heavy-duty aluminum foil sheets
Instructions
- Scrub potatoes clean and pat dry. Pierce each potato several times with a fork.
- Rub each potato with a light coat of olive oil, then sprinkle evenly with salt and pepper.
- Place each potato on a sheet of heavy-duty foil, add 1 pat of butter on top, and wrap tightly to seal.
- Arrange the foil-wrapped potatoes in a single layer in the slow cooker.
- Cook on Low for 7 to 8 hours or on High for 4 to 5 hours, until potatoes are fork-tender through the center.
- Carefully unwrap, sprinkle with chopped parsley, and serve hot with your favorite toppings.
Notes
- Note: For slightly crisper skins, open the foil during the last 30 minutes of cooking.
- Add a garlic clove or a thyme sprig inside each foil packet for aromatic flavor.
- Do not overcrowd the slow cooker, leave a little space for even heat circulation.
- Leftovers reheat well in the oven or microwave and can be repurposed into breakfast potatoes.
