For the Steak
- 2 lbs beef sirloin or flank steak, sliced into thin strips
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
For the Vegetables
- 2 large bell peppers (any color), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
For the Sauce
- 1 cup beef broth
- 1/3 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp ground ginger
- 1/2 tsp crushed red pepper flakes (optional)
- 2 tbsp cornstarch + 2 tbsp water (for thickening)
Instructions
- Prep the beef: In a bowl, toss beef strips with flour, salt, and pepper until evenly coated.
- Layer in the crockpot: Place sliced bell peppers, onion, and garlic in the bottom of a 6-quart slow cooker. Add beef strips on top.
- Make the sauce: In a medium bowl, whisk together beef broth, soy sauce, brown sugar, Worcestershire sauce, ginger, and red pepper flakes (if using). Pour over the beef and vegetables.
- Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours, until beef is tender.
- Thicken the sauce: In the last 30 minutes of cooking, stir together cornstarch and water, then mix into the crockpot. Cook until sauce thickens.
- Serve: Spoon over cooked white rice or noodles and garnish with extra sliced green onions if desired.

- For a richer flavor, sear the beef strips in a hot skillet before adding them to the crockpot.
