Ingredients
- Corn Tortillas: 12 medium
- Black Beans: 2 cans (15 oz each), drained and rinsed
- Enchilada Sauce: 3 cups
- Shredded Cheddar Cheese: 2 cups
- Diced Green Chiles: 1 can (4 oz)
- Corn Kernels: 1 cup
- Red Bell Pepper: 1, finely chopped
- Yellow Onion: 1 small, diced
- Garlic Cloves: 3, minced
- Olive Oil: 2 tablespoons
- Cumin Powder: 1 teaspoon
- Chili Powder: 1 teaspoon
- Salt and Pepper: to taste
- Fresh Cilantro: for garnish
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish with olive oil.
- Heat olive oil in a skillet over medium heat. Add onion, garlic, bell pepper, and corn. Sauté for about 5 minutes until softened.
- Stir in black beans, cumin, chili powder, salt, and pepper. Mix well and remove from heat.
- Spread a small layer of enchilada sauce at the bottom of the baking dish.
- Layer 4 tortillas over the sauce, followed by half the bean mixture, a third of the cheese, and more sauce. Repeat layers and finish with cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for another 10 minutes until bubbly and golden.
- Let it rest for 10 minutes, garnish with fresh cilantro, and serve warm.
