Description

Crispy golden corn tortillas filled with a perfectly melted blend of cheddar and mozzarella cheese, pan cooked until gooey inside and crunchy outside. A quick and comforting meal ready in just 20 minutes.


Ingredients

  • 6 small corn tortillas, about 6 inches each
  • 1 cup cheddar cheese, freshly shredded
  • 1 cup mozzarella cheese, freshly shredded
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat a nonstick skillet over medium heat for 2 to 3 minutes.
  2. In a bowl, combine cheddar cheese, mozzarella cheese, salt, and black pepper.
  3. Lightly brush one side of each tortilla with olive oil.
  4. Place one tortilla in the skillet, oiled side down. Sprinkle about 1/3 cup of the cheese mixture over half of the tortilla and fold it over.
  5. Cook for 2 to 3 minutes per side until golden brown and the cheese is fully melted. Repeat with remaining tortillas.
  6. Let tacos rest for 1 minute before serving.

  • Keep heat at medium to avoid burning before the cheese melts.
