- 6 small corn tortillas, about 6 inches each
- 1 cup cheddar cheese, freshly shredded
- 1 cup mozzarella cheese, freshly shredded
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat a nonstick skillet over medium heat for 2 to 3 minutes.
- In a bowl, combine cheddar cheese, mozzarella cheese, salt, and black pepper.
- Lightly brush one side of each tortilla with olive oil.
- Place one tortilla in the skillet, oiled side down. Sprinkle about 1/3 cup of the cheese mixture over half of the tortilla and fold it over.
- Cook for 2 to 3 minutes per side until golden brown and the cheese is fully melted. Repeat with remaining tortillas.
- Let tacos rest for 1 minute before serving.
Notes
- Use freshly shredded cheese for smoother melting.
- Keep heat at medium to avoid burning before the cheese melts.
- Reheat leftovers in a skillet to restore crispiness.
