Ingredients

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 200 g dark chocolate (for ganache)
  • 1 cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. In another bowl, combine eggs, milk, oil, and vanilla. Mix wet and dry ingredients together.
  4. Gradually add boiling water and stir until smooth.
  5. Divide the batter into pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. Cool cakes completely on a rack.
  7. For the ganache, heat heavy cream until just simmering, pour over chopped dark chocolate, rest for 2 minutes, and stir until glossy.
  8. Spread ganache over cooled cakes, layer, and serve.
