Description

Ingredients

  • 2 tablespoons olive oil or unsalted butter
  • 1 large yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 pounds white button or cremini mushrooms, sliced
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 4 cups vegetable or chicken broth
  • 1/4 cup heavy cream (optional)
  • Fresh chives or parsley, for garnish

Instructions

  1. Heat the olive oil or butter in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent and fragrant.
  3. Stir in mushrooms and thyme, season with salt and pepper.
  4. Cook until mushrooms are browned and their liquid has evaporated, about 8–10 minutes.
  5. Add broth, bring to a simmer, and cook for 20–25 minutes uncovered.
  6. Use an immersion blender or standard blender to purée the soup until smooth or leave some texture if desired.
  7. Stir in cream if using and adjust seasoning to taste.
  8. Serve hot, garnished with fresh herbs and a drizzle of cream or olive oil.
