Ingredients

  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup grated parmesan cheese
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, gently combine ground chicken, breadcrumbs, egg, parmesan cheese, garlic, parsley, olive oil, salt, black pepper, and Italian seasoning until just mixed.
  3. Lightly oil the parchment paper to prevent sticking.
  4. Roll the mixture into evenly sized meatballs and place them on the prepared baking sheet with space between each.
  5. Bake for 18 to 20 minutes until cooked through and lightly golden.
  6. Remove from the oven and let rest for a few minutes before serving.
