- 3 medium ripe bananas, about 1 1/2 cups mashed
- 2 cups all purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 F which is 175 C. Grease and line a loaf pan or 8 inch round cake pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream softened butter and sugar until light and fluffy. Beat in eggs one at a time.
- Stir in mashed bananas, milk, and vanilla extract until well combined.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Pour batter into the prepared pan and smooth the top evenly.
- Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas with brown spots for best sweetness and moisture.
- Avoid overmixing the batter to keep the cake soft and tender.
- You can add 1/2 cup chocolate chips or chopped walnuts for variation.
- Store in an airtight container at room temperature for up to 3 days.
