Ingredients

- 1 cup old fashioned oats, blended into oat flour
- 1/2 cup all purpose flour
- 2 teaspoons baking powder
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Blend the oats into fine oat flour.
- Whisk together the oat flour, all purpose flour, baking powder, sugar, and salt.
- In another bowl mix the milk, egg, melted butter, and vanilla.
- Combine the wet and dry ingredients and let the batter rest for 5 minutes.
- Heat a non stick skillet over medium heat and lightly grease if needed.
- Pour scoops of batter onto the skillet and cook until bubbles form on the surface.
- Flip and cook the other side until golden and fluffy.
Notes
- Do not overmix the batter to keep the pancakes airy.
- Let the batter rest to allow the oats to absorb moisture.
- Add cinnamon or berries for extra flavor.
