Description

Soft, warm, and incredibly fluffy pancakes made with blended oats for a cozy, wholesome breakfast that still feels indulgent.


Ingredients

  • 1 cup old fashioned oats, blended into oat flour
  • 1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Blend the oats into fine oat flour.
  2. Whisk together the oat flour, all purpose flour, baking powder, sugar, and salt.
  3. In another bowl mix the milk, egg, melted butter, and vanilla.
  4. Combine the wet and dry ingredients and let the batter rest for 5 minutes.
  5. Heat a non stick skillet over medium heat and lightly grease if needed.
  6. Pour scoops of batter onto the skillet and cook until bubbles form on the surface.
  7. Flip and cook the other side until golden and fluffy.

Notes

  • Do not overmix the batter to keep the pancakes airy.
  • Let the batter rest to allow the oats to absorb moisture.
  • Add cinnamon or berries for extra flavor.
