- 1 unbaked 9 inch pie crust
- 4 large eggs
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 1 cup chopped fresh spinach
- 1 small red bell pepper, finely diced
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- In a large bowl, whisk together eggs, milk, salt, and black pepper until smooth.
- Heat olive oil in a skillet over medium heat. Sauté onion and red bell pepper for 3 to 4 minutes. Add spinach and cook until wilted. Remove from heat.
- Place pie crust in a 9 inch pie dish. Spread vegetables evenly over the crust and sprinkle cheese on top. Pour egg mixture over filling.
- Bake for 35 to 40 minutes until the center is set and the top is lightly golden.
- Let cool for 10 minutes before slicing and serving.
Notes
- Blind bake crust for 8 minutes for a crispier base.
- Let quiche rest before slicing for clean cuts.
- Squeeze excess moisture from vegetables to avoid watery filling.
