Description

A creamy and savory Easy Quiche with spinach, red bell pepper, and cheddar baked in a flaky crust. Perfect for brunch, lunch, or a light dinner.

  • 1 unbaked 9 inch pie crust
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup chopped fresh spinach
  • 1 small red bell pepper, finely diced
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, whisk together eggs, milk, salt, and black pepper until smooth.
  3. Heat olive oil in a skillet over medium heat. Sauté onion and red bell pepper for 3 to 4 minutes. Add spinach and cook until wilted. Remove from heat.
  4. Place pie crust in a 9 inch pie dish. Spread vegetables evenly over the crust and sprinkle cheese on top. Pour egg mixture over filling.
  5. Bake for 35 to 40 minutes until the center is set and the top is lightly golden.
  6. Let cool for 10 minutes before slicing and serving.
