Description

A warm and comforting Easy Quiche made with fluffy eggs, fresh spinach, sweet red bell pepper, and melty cheddar cheese baked in a flaky pie crust. Perfect for breakfast, brunch, or a light dinner.

Ingredients

Scale
  • 1 unbaked 9 inch pie crust
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach, chopped
  • 1 small red bell pepper, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a mixing bowl, whisk together eggs, whole milk, salt, and black pepper until smooth.
  3. Stir in shredded cheddar cheese, chopped spinach, and diced red bell pepper.
  4. Place the unbaked pie crust into a 9 inch pie dish if not already fitted.
  5. Pour the egg mixture evenly into the crust, distributing the vegetables and cheese.
  6. Bake for 35 to 40 minutes until the center is just set and the top is lightly golden.
  7. Allow the quiche to rest for 5 to 10 minutes before slicing and serving.

Notes

  • Lightly sauté spinach first if it contains excess moisture.
  • For a richer texture, substitute half and half for the milk.
