Ingredients

- 2 whole garlic bulbs
- 1 to 2 tablespoons olive oil
- Pinch of salt (optional)
- Sprigs of fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the top 1/4 inch off each garlic bulb to expose the tops of the cloves. Drizzle with olive oil and sprinkle with salt if using.
- Wrap each bulb in foil or place in a small baking dish and cover tightly with a lid or foil.
- Set the wrapped garlic on a baking sheet and roast for 40 to 45 minutes, until the cloves are soft and golden.
- Let cool slightly, then squeeze the roasted cloves from the bulb.
- Use immediately or store in an airtight container covered with olive oil.
