Easy Strawberry Banana Pudding

  • Total Time: 2 hours 20 minutes
  • Yield: 10 servings 1x
  • Diet: Vegetarian

Description

A creamy, no-bake layered pudding featuring silky vanilla pudding, ripe bananas, and juicy strawberries, finished with crunchy vanilla wafers. Easy to assemble and perfect chilled for parties or a simple weeknight treat.

Ingredients

Scale
  • 2 boxes (3.4 oz each) vanilla instant pudding mix
  • 4 cups cold milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 tub (8 oz) whipped topping, thawed
  • 4 medium bananas, sliced
  • 2 cups fresh strawberries, hulled and sliced
  • 1 box (11 oz) vanilla wafers

Instructions

  1. In a large mixing bowl, whisk together the 2 boxes of vanilla instant pudding mix with 4 cups of cold milk until smooth and thickened, about 2 minutes.
  2. Stir in the 14 oz can of sweetened condensed milk until fully combined and smooth.
  3. Fold 8 oz of thawed whipped topping into the pudding mixture until light and airy.
  4. Prepare your serving dish, a trifle bowl or 9×13-inch dish works well, and lay a single layer of vanilla wafers on the bottom.
  5. Add a layer of sliced bananas over the wafers, then a layer of sliced strawberries.
  6. Spoon a generous layer of the pudding mixture over the fruit to cover.
  7. Repeat layers (wafers, bananas, strawberries, pudding) until ingredients are used, finishing with a top layer of pudding.
  8. Cover the assembled pudding and refrigerate for at least 2 hours or overnight to allow the wafers to soften and flavors to meld.
  9. Before serving, garnish with extra sliced strawberries and crushed vanilla wafers, then scoop into bowls or serve in individual jars.

Notes

  • Use ripe but firm bananas to avoid a mushy texture.
  • Slice strawberries just before assembling to keep them from releasing excess juice.
  • For a richer texture fold in an extra 1/2 cup of heavy cream whipped to soft peaks instead of some whipped topping.
  • Keep covered in the fridge to prevent the pudding from absorbing other odors.
