Instructions
- Preheat your oven to 350°F (175°C). Line a 9-inch round pan or pizza pan with parchment paper and set aside.
- In a mixing bowl, whisk together 1/2 cup melted unsalted butter, 1 cup granulated sugar, and 1/4 cup brown sugar until combined. Add 2 large eggs and 1 teaspoon vanilla extract and whisk until smooth.
- Stir in 3/4 cup all-purpose flour, 1/2 cup unsweetened cocoa powder, and 1/4 teaspoon salt until the batter is uniform and glossy.
- Pour the brownie batter into the prepared pan, spreading it evenly to the edges with a spatula.
- Bake the brownie base for 18 to 22 minutes, or until the top is set but the center remains fudgy. Remove from the oven and allow the brownie to cool completely in the pan.
- While the brownie cools, gently heat 1 1/2 cups white chocolate and 1/4 cup heavy cream together in a heatproof bowl over a pot of simmering water or in short bursts in the microwave, stirring until silky and smooth.
- Spread the melted white chocolate mixture evenly over the cooled brownie base using an offset spatula, creating a smooth, glossy layer.
- Arrange sliced strawberries, blueberries, kiwi, and raspberries decoratively over the white chocolate layer. Chill the assembled pizza briefly in the refrigerator to set the topping, about 10 to 15 minutes.
- Using a sharp knife, slice the brownie pizza into 10 wedges and serve at room temperature or chilled. Store leftovers covered in the refrigerator for up to 3 days.
