Description

Filipino Chicken Adobo is a comforting one-pot dish made with tender chicken simmered slowly in a savory, tangy sauce of soy sauce, vinegar, garlic, bay leaves, and peppercorns until rich and deeply flavorful.

Ingredients

Scale
  • 2 pounds bone-in chicken thighs and drumsticks
  • 1/2 cup soy sauce
  • 1/3 cup white vinegar
  • 6 cloves garlic, lightly crushed
  • 3 whole bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 cup water
  • 1 tablespoon cooking oil

Instructions

  1. Heat a large pot over medium heat and add the cooking oil.
  2. Add the chicken pieces and lightly brown them on all sides.
  3. In a bowl, combine soy sauce, vinegar, water, garlic, bay leaves, and peppercorns.
  4. Pour the mixture over the chicken in the pot.
  5. Bring to a gentle boil, then reduce heat, cover, and simmer for 35 minutes.
  6. Uncover and continue simmering for 10 minutes to slightly thicken the sauce.
  7. Remove bay leaves and serve hot with sauce.

Notes

  • For deeper flavor, let the chicken marinate in the sauce for 30 minutes before cooking.
  • Simmer uncovered longer if you prefer a thicker sauce.
  • This dish tastes even better the next day.
