- 1 pound white fish fillets, cooked and flaked
- 2 medium russet potatoes, about 1 pound, peeled and boiled
- 1 large egg
- 1 cup breadcrumbs
- 2 tablespoons green onions, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons olive oil, for pan frying
Instructions
- Heat a skillet over medium heat and add the olive oil so it warms gently.
- In a large bowl, mash the boiled potatoes until smooth. Add the flaked fish, egg, breadcrumbs, green onions, parsley, lemon juice, salt, and black pepper. Mix gently until fully combined.
- Ensure the skillet and oil are evenly heated but not smoking.
- Form the mixture into round patties about 3 inches wide. Place them on a plate and chill for 20 minutes.
- Place the patties in the skillet and cook for 4 to 5 minutes per side until golden brown and crisp.
- Remove from the pan and let them rest briefly on a plate.
- Serve warm with your favorite dipping sauce and a squeeze of fresh lemon.
