- 400 grams canned crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium heat for about 1 minute.
- Add olive oil and sliced onion. Cook for 4 to 5 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add crushed tomatoes, tomato paste, salt, black pepper, and paprika. Stir well and let the sauce simmer for 10 minutes.
- Nestle the fish fillets into the sauce in a single layer and spoon sauce over each fillet.
- Cover and simmer gently for 10 to 12 minutes until the fish flakes easily with a fork.
- Sprinkle chopped fresh parsley over the top before serving.
- Serve hot with extra sauce spooned over each portion.
