Instructions
- Preheat oven to 375°F and line a 12-cup muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix granulated sugar, eggs, milk, melted butter, and vanilla extract.
- Gradually stir dry ingredients into wet until just combined.
- In a separate small bowl, mix brown sugar and cinnamon.
- Spoon a bit of batter into each muffin cup, then sprinkle with the cinnamon sugar mixture.
- Top with more batter and swirl lightly with a toothpick.
- Bake for 18–22 minutes, or until golden and a toothpick comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
- Optional: Dust with powdered sugar before serving.
