Ingredients
Scale
- 1 pound boneless, skinless chicken thighs, cut into bite sized pieces
- 4 large russet potatoes, peeled and cut into fries
- 3 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- 1/2 cup ketchup
Instructions
- Preheat oven to 425 degrees Fahrenheit for baking fries, or heat oil in a deep pan to 350 degrees Fahrenheit if frying.
- In a mixing bowl, combine chicken pieces with 2 tablespoons olive oil, minced garlic, paprika, cumin, 1/2 teaspoon salt, and black pepper. Mix thoroughly and let marinate for at least 30 minutes.
- Toss the cut potatoes with remaining 1 tablespoon olive oil and 1/2 teaspoon salt. Spread evenly on a lined baking sheet in a single layer.
- Thread marinated chicken onto skewers, spacing pieces slightly apart.
- Bake fries for 30 to 35 minutes, flipping halfway through. Grill or pan cook chicken skewers for 10 to 12 minutes, turning occasionally, until fully cooked and lightly charred.
- In a small bowl, stir together plain yogurt, lemon juice, and a pinch of salt to create the garlic yogurt sauce.
- Allow chicken to rest for 5 minutes. Serve skewers alongside crispy fries with yogurt sauce and ketchup on the side.
Notes
- Soak cut potatoes in cold water for 20 minutes before cooking for extra crispiness.
- Do not overcrowd the baking sheet to ensure fries crisp properly.
- Let the chicken rest briefly before serving to retain juices.
