- 1 cup green lentils, rinsed
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (14.5 ounces) diced tomatoes
- 6 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Heat a large pot over medium heat.
- Add olive oil, then add onion, carrots, and celery and cook for 5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add lentils, diced tomatoes, vegetable broth, bay leaf, and dried thyme.
- Bring to a gentle boil, then reduce heat and simmer for 35 minutes until lentils are tender.
- Remove bay leaf and season with salt and black pepper.
- Serve warm.
Notes
- Soup thickens as it sits, add water or broth when reheating.
- Tastes even better the next day.
- Freeze up to three months in airtight containers.
