Description

A hearty and comforting French lentil and vegetable soup made with tender lentils, classic vegetables, and herbs simmered into a rich and nourishing broth.


Ingredients

  • 1 cup green lentils, rinsed
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. Heat a large pot over medium heat.
  2. Add olive oil, then add onion, carrots, and celery and cook for 5 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add lentils, diced tomatoes, vegetable broth, bay leaf, and dried thyme.
  5. Bring to a gentle boil, then reduce heat and simmer for 35 minutes until lentils are tender.
  6. Remove bay leaf and season with salt and black pepper.
  7. Serve warm.

Notes

  • Soup thickens as it sits, add water or broth when reheating.
  • Tastes even better the next day.
