A cozy fusion of classic French onion soup and homemade ravioli, this dish combines rich caramelized onions, melty Gruyère, and soft pasta pillows for a warm and comforting meal.

- 3 large yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1 tablespoon balsamic vinegar
- 1/4 cup beef or vegetable broth
- 1 cup Gruyère cheese, grated
- 1/2 cup Parmesan cheese, grated
- 24 ravioli wrappers
- Salt and pepper to taste
Instructions
- Heat a skillet over medium-low. Melt butter and olive oil, then add sliced onions. Cook slowly for 30 to 40 minutes, stirring occasionally until caramelized.
- Add garlic, thyme, balsamic vinegar, and broth. Let simmer for 5 minutes. Remove from heat and cool.
- Once cooled, stir in the Gruyère and Parmesan. Season with salt and pepper to taste.
- Lay out half the ravioli wrappers. Add a spoonful of filling to the center of each. Wet edges, place another wrapper on top, and press to seal.
- Boil a large pot of salted water. Add ravioli in batches and cook for about 3 minutes, or until they float.
- Optional: Place cooked ravioli in a baking dish, top with cheese, and broil until bubbly.
- Serve warm with fresh thyme or a spoonful of hot broth.

- Make filling a day ahead to save time.
- Use a ravioli mold for even shapes.
