- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 8 ounces mascarpone cheese
- 1 cup heavy cream, cold
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- 1/2 cup fresh blueberries
- 2 fresh kiwi, peeled and sliced
- 1/2 cup fresh raspberries
Instructions
- Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 inch tart pan.
- In a bowl, mix flour and granulated sugar. Cut in cold butter until crumbly. Add egg and mix until a dough forms.
- Press dough evenly into the tart pan and prick with a fork.
- Bake for 18 to 20 minutes until lightly golden. Cool completely.
- Beat mascarpone, powdered sugar, and vanilla until smooth. Whip heavy cream to soft peaks and fold into mascarpone mixture.
- Spread filling into cooled crust and arrange strawberries, blueberries, kiwi, and raspberries on top.
- Chill for at least 1 hour before slicing and serving.
