Description

  • 1 cup cold water
  • 2 to 3 cups vegetable oil, for frying

  • 2 tablespoons unsalted butter, melted

Instructions

  1. Heat vegetable oil in a deep skillet or heavy pot to 350 degrees Fahrenheit.
  2. In a mixing bowl, whisk together the flour, cornstarch, garlic powder, paprika, salt, and black pepper.
  3. Gradually whisk in the cold water until a smooth batter forms.
  4. Pat the artichoke hearts completely dry with paper towels.
  5. Dip each artichoke heart into the batter, coating evenly.
