- 1/2 cup milk
- 2 tablespoons olive oil
- 1 medium red bell pepper, diced
- 2 cups fresh spinach, loosely packed
- 1/2 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined and slightly frothy.
- Heat olive oil in a 10 inch oven safe skillet over medium heat.
- Add the diced red onion and red bell pepper and sauté for about 4 minutes until softened.
- Add the fresh spinach and cook until wilted, stirring gently.
- Spread the vegetables evenly in the skillet, then pour the egg mixture over the top. Gently stir once to distribute the ingredients evenly.
- Sprinkle the crumbled feta cheese evenly over the surface.
- Cook on the stovetop for 2 to 3 minutes until the edges begin to set.
- Transfer the skillet to the oven and bake for 12 to 15 minutes, until the center is just set and no longer liquid.
- Remove from the oven and let rest for 5 minutes before slicing and serving.
Notes
- For extra richness, substitute milk with heavy cream.
- Always sauté vegetables first to prevent excess moisture in the frittata.
- Do not overbake, the center should be just set for a tender texture.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
