Description
Smoky, juicy, and full of bold garlicky flavor, these grilled marinated mushrooms are the perfect side or topping for any meal.
Ingredients

- 1 pound button or cremini mushrooms, cleaned and trimmed
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 4 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Preheat your grill or grill pan over medium-high heat.
- In a large bowl, whisk together olive oil, balsamic vinegar, soy sauce, garlic, oregano, salt, and pepper.
- Add mushrooms to the bowl and toss to coat evenly. Let them marinate for at least 30 minutes.
- If using skewers, thread the mushrooms onto them. Otherwise, prepare a grill basket.
- Grill mushrooms for 5 to 7 minutes, turning occasionally until tender and charred.
- Remove from grill and garnish with fresh chopped parsley.
- Serve warm or chilled in salads, wraps, or as a side dish.
Notes
- Do not over-marinate, or the mushrooms may get too soft.
- Use a grill basket or skewers to prevent mushrooms from falling through the grill grates.
- A squeeze of lemon juice or drizzle of balsamic glaze before serving adds extra brightness.
