Description

Smoky, juicy, and full of bold garlicky flavor, these grilled marinated mushrooms are the perfect side or topping for any meal.


Ingredients

  • 1 pound button or cremini mushrooms, cleaned and trimmed
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large bowl, whisk together olive oil, balsamic vinegar, soy sauce, garlic, oregano, salt, and pepper.
  3. Add mushrooms to the bowl and toss to coat evenly. Let them marinate for at least 30 minutes.
  4. If using skewers, thread the mushrooms onto them. Otherwise, prepare a grill basket.
  5. Grill mushrooms for 5 to 7 minutes, turning occasionally until tender and charred.
  6. Remove from grill and garnish with fresh chopped parsley.
  7. Serve warm or chilled in salads, wraps, or as a side dish.

Notes

  • Do not over-marinate, or the mushrooms may get too soft.
  • Use a grill basket or skewers to prevent mushrooms from falling through the grill grates.
  • A squeeze of lemon juice or drizzle of balsamic glaze before serving adds extra brightness.
