  • 500 grams potato gnocchi
  • 120 grams fresh spinach, roughly chopped
  • 240 milliliters heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 100 grams grated mozzarella cheese
  • 50 grams grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a gentle boil over medium high heat.
  2. In a deep skillet over medium heat, add olive oil and butter. Once melted, sauté the minced garlic for about 1 minute until fragrant.
  3. Stir in the heavy cream and let it simmer gently for 3 to 4 minutes.
  4. Add the chopped spinach and cook for about 2 minutes until wilted.
  5. Remove the skillet from the heat and stir in the mozzarella and Parmesan cheese until melted and smooth. Season with salt and black pepper.
  6. Add the gnocchi to the boiling water and cook until they float to the surface, about 2 to 3 minutes. Remove with a slotted spoon.
  7. Transfer the cooked gnocchi directly into the sauce and toss gently to coat. Add a splash of reserved cooking water if needed to loosen the sauce.
  8. Serve immediately while hot and creamy.
