- 500 grams potato gnocchi
- 120 grams fresh spinach, roughly chopped
- 240 milliliters heavy cream
- 2 cloves garlic, minced
- 2 tablespoons butter
- 100 grams grated mozzarella cheese
- 50 grams grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Bring a large pot of salted water to a gentle boil over medium high heat.
- In a deep skillet over medium heat, add olive oil and butter. Once melted, sauté the minced garlic for about 1 minute until fragrant.
- Stir in the heavy cream and let it simmer gently for 3 to 4 minutes.
- Add the chopped spinach and cook for about 2 minutes until wilted.
- Remove the skillet from the heat and stir in the mozzarella and Parmesan cheese until melted and smooth. Season with salt and black pepper.
- Add the gnocchi to the boiling water and cook until they float to the surface, about 2 to 3 minutes. Remove with a slotted spoon.
- Transfer the cooked gnocchi directly into the sauce and toss gently to coat. Add a splash of reserved cooking water if needed to loosen the sauce.
- Serve immediately while hot and creamy.

- Use freshly grated cheese for the smoothest sauce texture.
- Do not overcook the gnocchi, remove them as soon as they float.
