  • 6 bone in skin on chicken thighs, about 2 pounds
  • 1 1/2 cups dry couscous
  • 2 cups chicken broth
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup fresh cilantro, packed
  • 1/2 cup fresh parsley, packed
  • 1 to 2 small green chilies
  • 3 garlic cloves
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a blender or food processor, combine cilantro, parsley, green chilies, garlic, olive oil, lemon juice, cumin, 1 teaspoon salt, and black pepper. Blend until smooth to create the green harissa.
  3. In a large baking dish, combine couscous, chicken broth, zucchini, cherry tomatoes, red onion, and remaining 1/2 teaspoon salt. Stir gently.
  4. Nestle the chicken thighs on top of the couscous mixture. Spoon the green harissa evenly over each piece of chicken.
  5. Cover tightly with foil and bake for 35 minutes. Remove foil and bake an additional 15 minutes until the chicken reaches 165 degrees F internally and the top is lightly browned.
  6. Remove from oven and let rest covered for 5 minutes. Fluff the couscous gently with a fork before serving.
  7. Serve warm, ensuring each portion includes chicken, couscous, vegetables, and sauce.
