Description

Ingredients

- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 2 cups kale, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 4 to 6 large eggs
- 1/3 cup feta cheese, crumbled, optional
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook for about 5 minutes until softened.
- Stir in minced garlic and cook until fragrant.
- Add spinach and kale in batches, stirring until fully wilted.
- Mix in parsley, cilantro, cumin, red pepper flakes, salt, and black pepper.
- Create small wells in the greens using a spoon and crack eggs directly into each well.
- Cover the skillet and cook for 5 to 8 minutes, until egg whites are set and yolks are still slightly soft.
- Sprinkle with crumbled feta if using.
- Serve warm straight from the skillet.

- Cook eggs gently over medium low heat for best texture.
- Covering the skillet helps the egg whites set evenly.
- Add a squeeze of fresh lemon before serving for extra brightness.
