Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, whip 1 cup ricotta with 1/4 cup grated Parmesan, 1 teaspoon lemon zest, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and airy.

- Arrange the thinly sliced heirloom carrots in a shingled, colorful pattern over the ricotta. Sprinkle with 1 teaspoon fresh thyme leaves and drizzle 2 tablespoons olive oil over the carrots.
- Brush the pastry border with the beaten egg for a glossy, golden finish.
- Bake for 25–30 minutes, until the pastry is golden and the carrots are tender. Remove from oven and let rest for 5 minutes before slicing.
- Slice into squares or wedges and serve warm or at room temperature. Optionally drizzle a little extra olive oil or a light balsamic reduction before serving.
