Heirloom Carrot and Whipped Ricotta Tart

  • Total Time: 45 minutes
  • Yield: 6 servings
  • Diet: Vegetarian

Description

A colorful, savory tart featuring thinly sliced heirloom carrots roasted and arranged over an airy whipped ricotta filling on a golden puff pastry base, finished with thyme and a drizzle of olive oil.

Ingredients

  • Puff Pastry, 1 sheet, thawed
  • Heirloom Carrots, 4–5 medium, sliced thin lengthwise
  • Ricotta Cheese, 1 cup
  • Parmesan Cheese, 1/4 cup, grated
  • Lemon Zest, 1 teaspoon
  • Fresh Thyme, 1 teaspoon, leaves
  • Olive Oil, 2 tablespoons
  • Egg, 1, beaten (for egg wash)
  • Salt, 1/2 teaspoon
  • Black Pepper, 1/4 teaspoon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whip 1 cup ricotta with 1/4 cup grated Parmesan, 1 teaspoon lemon zest, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and airy.
  3. Roll out the thawed puff pastry sheet onto the prepared baking sheet and lightly score a 1 inch border around the edges without cutting all the way through.
  4. Spread the whipped ricotta mixture evenly within the scored border.
  5. Arrange the thinly sliced heirloom carrots in a shingled, colorful pattern over the ricotta. Sprinkle with 1 teaspoon fresh thyme leaves and drizzle 2 tablespoons olive oil over the carrots.
  6. Brush the pastry border with the beaten egg for a glossy, golden finish.
  7. Bake for 25–30 minutes, until the pastry is golden and the carrots are tender. Remove from oven and let rest for 5 minutes before slicing.
  8. Slice into squares or wedges and serve warm or at room temperature. Optionally drizzle a little extra olive oil or a light balsamic reduction before serving.

Notes

  • Use a high-quality puff pastry for the best flakiness.
  • Whip the ricotta until airy to create a light, spreadable filling.
  • For extra depth, roast the carrot slices briefly before arranging them on the tart.
  • Chill the pastry briefly before baking to encourage a higher rise.
  • Consider a light drizzle of honey or balsamic reduction to finish for a sweet-savory contrast.
